Chickens at home (only for eggs!)

In this category you will find all recipes that contain chicken or poultry as a main ingredient. Some of the recipes might be strange or unusual but hopefully they will give you some ideas and inspiration. Although pre-packed chicken breasts, legs and thighs are relatively cheap to buy, be bold, buy a whole bird and joint it yourself. It works out even cheaper than buying pre-packed and only takes about 10 minutes. The more experienced you are, the less time it takes. Chicken cooked on the bone also has a superior flavour. One of the the benefits of preparing your own chicken is that you can make wonderful chicken stock from the leftover carcass. Don't forget to cut off and discard the Parson's nose. When cooking chicken, the healthy option is probably to remove the skin unless your recipe specifically calls for the skin.

As with all other meats, free-range and organic are worth the extra if your purse can run to it.

Pullets

Pullets are hens which are under 1 year old. Whilst they are able to lay, their eggs are small, although rich and for this reason are favoured by pastry chefs.
