Philadelphia chicken and sweetcorn quesadillas

Easy to make creamy quesadillas using philadelphia light with garlic and herbs.

Method

  1. Heat chicken, sweetcorn, spring onion and tomato puree with 2 tablespoons of water in a small pan, stirring occasionally.
  2. Spread one of the tortillas with the Philly. Spoon the chicken mixture over one tortilla and top with the other.
  3. Heat a large frying pan and add the filled tortilla. Cook for 2-3 minutes or until golden brown.
  4. Turn over with a large spatula and cook the other side until golden brown.

Serving suggestions

Slice into 4 wedges and serve with a green salad.
