This recipe is similar to plain old gammon and pineapple, but with an interesting twist.

Method

  1. Finely chop the pineapple and mix with the breadcrumbs, honey, olive oil and season with salt and pepper
  2. Grill the gammon for 5 minutes on one side
  3. Turn over and splash a little dark soy on the uncooked side. Top the steaks with the pineapple and breadcrumb mix and gently grill for another 10 minutes

Serving suggestions

Serve with fresh tomatoes, French fries and Allioli a la Catalana (garlic and oil sauce)

Chef's note

Blitz old stale bits of decent bread in a food processorand store in an airtight container and you'll always have good quality breadcrumbs for recipes like this.
