Sundried tomato sauce

Method

  1. Mix all the ingredients for the meat balls together except for the olive oil, in a bowl.
  2. Shape into 16 small balls.
  3. Heat the oil in a frying pan & fry the meat balls until browned, turning frequently.
  4. Remove from heat & leave to one side.
  5. To make the sauce, heat the oil in a large pan.
  6. Add the onions & garlic & cook for 10 minutes until translucent.
  7. Add the tinned tomatoes, sundried tomatoes, paprika, wine, parsley, salt & pepper.
  8. Bring the sauce to the boil, reduce the heat to simmer & add the meat balls.
  9. Cook for 20 minutes.

Serving suggestions

Serve with linguine, shavings of parmesan & green salad.
