Best recipe reviewGarlic, ginger, spice and colour! 4.5/5 Very authentic looking and tasting |
After buying Romy Gill's excellent "Romy Gill's India", one of the recipes that I regularly use is tandoori masala Kukkad.
After making variations of this around thirty times, this is my preferred version.
The main changes are that I use chicken thigh fillets and Sapana Ginger and Garlic Paste instead of fresh ginger and garlic.
Instead of chilli powder, I now use Taste Sensation harissa seasoning as the flavour is good and it's easier to moderate the heat if I'm serving this to guests!
I use a mixture of szechuan peppercorns and black peppercorns, additional panch phoran and a little jaggery to sweeten. Other than that the recipe is quite similar.
I cook the chicken on a rack over a tray covered with greaseproof paper, under a low grill (170ยฐ C) for about 50 minutes.
We now also prefer to serve this chicken cold as it is fabulous finger food.
