If you make lots of spicy recipes, like curries, dhals, spicy dips, then this is for you. I've been using it in place of fresh garlic and ginger and it works perfectly. I even think it's better than the fresh article - it certainly has a fabulous taste.

My only concern, because it is water-based was that it might go off before I get a change to use it all up. In the end I decided to split it into two - 500ml in a Kilner jar which I keep in the fridge and I've frozen the remaining 500ml. It works perfectly well once defrosted.

I use about two tablespoons of this paste in place of about 6 big fresh garlic cloves and 3" of fresh peeled ginger root.
