Mint butter is a good alternative to mint sauce when you need an accompaniment to lamb or mutton.
Make it in large quantities when mint is in season and freeze in batches.

- 100g (4 oz) butter
- 2 tablespoons fresh mint leaves, washed and finely chopped
- Pinch of each; salt, pepper and sugar
Method
- Work the mint and seasoning into the butter
- Shape by rolling in foil
- Cut into usable portions
- Wrap well, use immediately or refrigerate or freeze for later use.
