Boiled chicken pieces

I needed to make a note of this process for Chicken and orange pilaf so thought it better to add this as a separate recipe.

I sounds fowl, but it's a really nice way to cook chicken, it leaves it juicy and flavoursome and you also have the bonus of a really good chicken stock.

Use whatever you have to hand, herbs, leeks (even the old ones that have bolted) , carrots, parsnips, potatoes, beans, whatever!

Method

  1. Cut the chicken into even sized pieces, if using legs or thick cuts then make a few deep slashes in the meat to help even the cooking time.
  2. Lay the chicken pieces in the bottom of a saucepan.
  3. Layer the vegetables and herbs on top.
  4. Just cover with boiling water.
  5. Bring to the boil and then simmer, covered for 15 to 20 minutes.
  6. Check the chicken is cooked by cutting into thick flesh.
  7. Remove the chicken pieces and drain the stock.
  8. If using later in the day, refrigerate everything and follow the last step when you actually need to use the chicken.
