This really is a Grindelwald cow watching me try my first käseschnitte!

Having just returned from a Swiss summer holiday, I have to add this recipe - we had a few variations of this, most were more like a glorious pizza than cheese on toast.

It's made really special by the addition of a fried egg on the top.

Mise en place

  • Preheat the oven to 200° C (400° F - gas 6), [fan oven 180° C & reduce cooking time by 10 mins per hour]

Method

  1. Make one bowl of käseschnitte for each person
  2. Toast the slices of bread
  3. Put the toast in 2 separate oven-proof dishes, slightly larger than the piece of toast
  4. Drizzle the white wine or apple juice over the toast
  5. Cover with the ham
  6. Mix the topping ingredients together and spread over the ham
  7. Bake in the oven for 12 minutes
  8. Meanwhile fry 2 eggs in the olive oil

Serving suggestions

Sprinkle with paprika and a little more fresh herbs

Top with a fried egg
