Method

  1. Cut the herring into small pieces.
  2. Reserve a few pieces for garnish.
  3. In a bowl which has been rinsed with cold water, mix the herring, potatoes, beetroot, apples, onions, gherkins and one chopped hard boiled egg.
  4. Mix well and add the oil, vinegar and seasoning.
  5. Press together firmly and un-mould onto a flat dish.
  6. Cover with a thin layer of mayonnaise.
  7. Garnish with the remaining herring, egg slices and lettuce leaves.
