A simple but unusual way of making rice pudding from Colombia.
Ingredients

- 110 g raisins
- 1 tablespoon butter
- 500 g pudding rice
- 4 tablespoons sugar
- ½ teaspoon salt
- 680 ml water
- 240 ml strong, sweetened, black coffee
Method
- Melt the butter in a saucepan and add the raisins.
- When they are plump, add the remaining ingredients and leave to simmer until the rice is cooked and has absorbed the liquid.
