Prawn cocktail (2)

An old favourite from the days of the Hostess Trolley 😸

Ingredients

• 125g equal mixture of white cabbage and crisp lettuce, shredded - enough to line 4 individuals dishes or bowls
• ½ red onion, finely sliced
• ¼ large cucumber, peeled and diced
• 130ml mayonnaise, preferably home made
• 2 tablespoons tomato ketchup
• Tabasco, to taste
• 1 tablespoon brandy
• 200g-250g shelled, cooked, king prawns
• Cayenne pepper
• Lemon slices, to garnish

Method

1. Line 4 bowls or dishes with the cabbage and lettuce mixture.
2. Sprinkle the onion and cucumber over the top.
3. Make the Marie Rose sauce by thoroughly mixing the mayonnaise, tomato ketchup, Tabasco and brandy.
4. Spoon over the prawns and sprinkle the Cayenne pepper over the top,
5. Garnish with a lemon slice and serve.

Serving suggestions

This is traditionally served with thin slices of wholemeal bread and butter.
