Orange glazed carrots
Looking around Flickr for a photograph, I found this recipe by Robin, (http://www.flickr.com/photos/fotoosvanrobin/sets/). The recipe and the photograph looked so good, I just had to add it. Robin has a very interesting Cookery blog, take a look.
- 450g small carrots, chopped
- 1.5 tablespoons butter
- Juice of 2 oranges
- 1 tablespoon sugar
- 1 tablespoon Madeira
- Chopped flat leaf parsley
- Slowly sauté or stir-fry the carrots in the butter for about 4 minutes.
- Add the sugar, madeira and orange juice, turn up the heat and allow the liquid to vapourise. Toss the carrots regularly to prevent them from sticking
Serve with chopped flat-leaf parsley.
I've not tried this recipe yet, though I would think a teaspoon of fennel seeds would be a nice addition.
