Breakfast muffins

This is a recipe to make English muffins that are similar to crumpets. It's not a recipe for those horrid gooey sweet things!
Ingredients

- ½ teaspoon dried active yeast
- 300 g (11 oz) strong white flour
- 1 teaspoon sugar
- 25 g (1 oz) butter
- ½ teaspoon salt
- 1 medium egg, beaten
- 150 ml water - or by weight instead of volume, 150 g water
Method
- Add all of the ingredients to your breadmaker and set to a long (3 hour +) dough program
- French dough setting on a Panasonic SD253 breadmaker
- Menu option 21 (French dough) on a Panasonic SD-ZB2502 automatic breadmaker
- Knead lightly and roll out to 6 mm (1/4") thick
- Cut out 8 cm (3") discs
- Cover with a damp cloth and leave in a warm place until doubled in size
- Bake at 230° C (450° F - gas 8) for 10 minutes
- The muffins should sound hollow when tapped on the bottom with a knife
Serving suggestions
Toast lightly, butter and serve immediately
