A great cheese, chicken and pasta recipe from South Caernarfon Creameries, the award winning Welsh cheese makers.

Mise en place

  • Set your oven to 180° C (350° F - gas 4), [fan oven 160° C & reduce cooking time by 10 mins per hour]

Method

  1. Cut tomatoes in half and arrange on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with the thyme leaves. Bake for 20 minutes.
  2. Stir fry chicken in 1 tablespoon olive oil until cooked through
  3. Cook pasta in boiling salted water until al dente (follow packet instructions)
  4. Drain pasta, place in a baking dish. Stir through chicken and arrange tomatoes on top.
  5. Sprinkle over grated cheese and place under a hot grill to melt cheese.
  6. Season with black pepper and serve with a green salad.
