Ingredients

• 1 pack (1.25kg) Purple Majesty potatoes
• 4 tablespoons of Chicken or vegetable stock
• 1-2 tablespoons mild olive oil or butter if wanted

Method

1. Boil, steam or microwave the potatoes.
2. Strain the potatoes and return to pan.
3. Mash with a little chicken or vegetable stock until your desired texture.
4. You can also add a little butter or olive oil.
5. The resulting mash should be rich and smooth in appearance.
