Pisto is a type of stew which crops up throughout Spain in several variations.

Method

  1. Wash the peppers, remove the seeds and chop.
  2. Peel the onion, discarding the external layers.
  3. Wash the courgettes and chop them.
  4. Put the vegetables in the bowl 4 seconds / Speed 4.
  5. Lower the ingredients into the bowl with the spatula.
  6. Pour the olive oil into the bowl 8 minutes / Temp. Varoma / Reverse Blade / Speed Spoon.
  7. Add the tomatoes, stock cubes, white wine, sugar and pepper 20 minutes / Temp. Varoma / Reverse Blade / Speed Spoon.
  8. Four minutes before the end of the cooking time, add the beaten eggs through the hole in the lid.
  9. Serve with the toasted bread.
