Method

  1. Melt the butter in a heavy bottomed pan.
  2. Add the onions and bacon and sauté until the onion are soft.
  3. Stir and the flour and gently cook for about 4 minutes - do not allow to burn.
  4. Gradually stir in the hot stock, ensuring there are no lumps.
  5. Add the beans and chervil and simmer for 45 minutes.
  6. Add the potatoes and season lightly.
  7. Simmer for a further 15 minutes, or until the potatoes are cooked.
  8. Adjust seasoning.
  9. Serve with the sour cream.
