I have made this before and saw James martin doing this on TV recently.
This is my take on this recipe, slightly changed by adding half an orange and not bothering about the butter, or reducing the results to a syrup. The carrots have plenty of flavour already, without needing extra oils or butter.
Use about one medium to large carrot for each person. The thinner the strips of carrot, the more intese the flavours are.
Ingredients

- 2 large or medium carrots
- 5 whole star anise
- Half an orange, with peel, sliced
- 2 teaspoons sea salt
- 1 tablespoon demerara sugar
- Enough water to cover the carrots by 5 cm
Method
- Peel the carrots and slice lengthways into fairly thin strips, about 10cm thick
- Add the spices, salt and sugar to the water
- Bring to the boil and simmer vigorously for 25 minutes or until cooked to you liking.
- Remove the spices, drain and serve.
