An ideal accompaniment to oysters
- 110ml (4 fl oz) red wine vinegar
- ½ banana shallot, finely diced
- 1 tablespoon fresh chives, finely chopped
- Freshly ground black pepper, to taste
- ½ teaspoon very finely chopped red chilli
- Mix all the ingredients together and mix well
- Leave for 30 minutes to infuse
- Stir again and serve
