Serrat del Triadó cheese

Serrat del Triadó is an unpasteurised cows' milk cheese produced by Tros de Sort, in the town of Sort, in the Catalan Pyrenees. It is an artisan cheese which is semi-hard, uncooked and pressed, with a natural rind is matured for 3 to 6 months.

Of medium strength, the cheese has a buttery and slightly acidic flavour. The texture is smooth with smallish holes.

It also comes in a variety containing organic herbs - dill, tarragon and wild celery - which adds a distinctive taste and aroma.
