Ingredients

• 1 cooked egg yolk
• ½ onion
• 1 small handful of fresh parsley
• 1 tablespoon capers
• 2 tablespoons fresh oregano
• ½ tablespoon fresh tarragon
• 100g olive oil
• 25g Balsamic vinegar
• Black pepper
• Salt

Method

1. Peel the onion, cut it and put it together with the rest of the ingredients in the bowl.
2. Blend 1 minute / Speed 3 then for a further minute, gradually increasing from Speed 3-10.
3. Keep in the fridge.

Variations

The mixture of herbs is what makes this sauce delicious and which gives it an intense green colour. It is a perfect accompaniment for meat, fish or salads.

It is served cold.
