Method

  1. Peel and cube the potatoes then simmer in salted water for 5 minutes, then drain.
  2. Heat up the oil in a casserole dish then fry the potatoes for 2-3 minutes.
  3. Add the onions, followed by the mushrooms. Stirring to avoid sticking.
  4. Add the finely shredded cabbage.
  5. Once soft add the tomato paste diluted in the water and ¼ of lemon zest.
  6. Season and cover with a little greaseproof paper, simmer for a further 15 minutes until everything is cooked.
