The milk is heated to 29 degrees Celsius and after half and hour, the mushroom based rennet is added. Once the milk has curdled, the curd is chopped into pieces the size of large peas. It is then washed twice to remove the whey and after a brief rest, the curd is place into moulds and drained. Then the cheese is pressed and after several hours, the cheese is turned and pressed harder. After pressing the cheese is matured within 24 hours and is from a few days to one week. .
