A Spanish yeasted dough for making pies and pasties.

Mise en place

  • Preheat the oven to 200°C / 400°F / Gas 6.

Method

  1. Tip all of the ingredients into the bowl, except the egg, yeast, flour and salt. 1 minute / 37° / Speed 2.
  2. Add the egg and yeast and mix 5 seconds / Speed 4.
  3. Add the flour and salt and mix 25 seconds / Speed 6 and then 2 minutes / Knead.
  4. Divide the dough into two.
  5. Roll out thinly and line a rectangular dish.
  6. Fill with your chosen filling (it must be cold), and cover with the remaining dough, sealing the borders well.
  7. Prick the dough and glaze with the beaten egg and decorate [with spare pieces of pastry] as desired.
  8. Bake in the oven for about 30 minutes.
