A very odd mix but it works very well. The better the quality of the frankfurters, the nicer this dish is.

A quick and economical meal that you probably won't ever have tried before. The frankfurters (hot dogs) and ginger lentils went really well together.

Method

  1. Add the lentils and rosemary sprig to a medium sized pan
  2. Cover with cold water
  3. Bring to the boil and then reduce the heat and simmer for 15 minutes or until tender.
  4. Meanwhile, heat the olive oil and sauté the ginger, garlic for 4 minutes.
  5. Add the spring onions and chilli (if using whole chillies) and sizzle for a few more minutes more.
  6. Stir in the lentils and chilli sauce (if using).
  7. Microwave the frankfurters or hot dogs for a few minutes or boil for 5 minutes.
  8. Serve.

Serving suggestions

Serve with garnished with lemon slices or a splash of lemon juice, alongside the hot dogs or frankfurters.

Variations

Use any variety of lentils, some may take longer to cook than others.

Chef's notes

Obviously fresh ginger would work just as well.

Peeling ginger

There is no need to peel ginger. As a result of attending a Thai cookery demo, we have learnt that peeling ginger is unnecessary unless for aesthetic purposes as the skin is high in fibre and full of flavour. However, do remove any bits that have become tough or woody.
