Bruzzu is a Ligurian cheese produced from the whey of ewes' milk. It is also called Ricotta di Pecora. It has a creamy white colour, and the flavour is more or less spicy depending on its age. It matures in about a week in cellars and the cheeses are turned every day. It is made in the area of Cosio Arroscia in the province of Imperia.
