- 700g Roosters, washed and cut into thick wedges
- 4 tablespoons Olive oil
- ¼ teaspoons Ground cumin
- ¼ teaspoons Ground coriander
- ¼ teaspoons Paprika
Method
- Pre - heat oven to 225 C / Gas 7
- Place a roasting tray into the oven and leave till tray is very hot.
- Pour the oil into the tray, arrange the potatoes in a single layer onto the tray, return the tray to the oven and roast the potatoes till golden brown (about 20 minutes), turning once or twice.
- During the last 5 minutes of cooking sprinkle the spices over the chips.
- Remove potatoes from the oven, sprinkle with sea salt and serve with garlic mayonnaise or your favourite dip.
