Ingredients

- 8 plaice fillets
- Beaten egg and breadcrumbs to coat
- 110g butter
- 225g button mushrooms, cut in half if largish
- 1 x 284ml pot single cream
- Lemon juice
- 1 tablespoon of Tomato purée
Method
- Lightly season the plaice fillets
- Dip in the beaten egg and then the breadcrumbs
- Lay them in a buttered oven-proof dish
- Dot with half of the butter
- Bake at 190° C (375° F - gas 5), [fan oven 170° C] until the fish is nice and golden - about 20 minutes and slightly less for fan oven
- Meanwhile, melt the remaining butter in a frying pan
- Add the mushrooms and lightly cook them
- Stir in the cream, mixed with a little lemon juice and tomato purée
- Pour this sauce over the plaice and return to the oven for a few minutes.
