Method

  1. Wash and dry the anchovies.
  2. Either pound them, with the butter in a mortar and pass through a fine sieve, or blend in a food processor.
  3. Form the butter into a roulade, wrap in cling-film and chill.

Serving suggestions

Used to accompany grilled meat and fish.

Variations

Can be mixed with some dried herbs or fresh chives and parsley.
