The Auvergne is a volcanic region in central France which comprises 4 départements: Allier, Cantal, Haute-Loire and Puy-de-Dôme. As well as producing a range of excellent cheeses, it is also famous for its production of puy lentils and the Dry Auvergne sausage. It is also the home of 'Pounti', a delicious type of meat loaf, with herbs, and stuffed with prunes.
