Three ingredient pineapple cake

I found this recipe in a copy of The Times in its Food and Drink section.
It looked quite fun and was easy to make.
Ingredients

- 250 g self-raising flour
- 200g caster sugar
- 450 g can of pineapple
Mise en place
- Preheat your oven to 180° C (350° F - gas 4), [fan oven 160° C & reduce cooking time by 10 mins per hour]
Method
- Spray a springform cake-tin with olive oil and lien the base with a circle of greaseproof paper
- Add the pineapple chunks to an electric mixer with a metal blade and blend to a pulp
- If you do not have access to a food mixer you can buy ready crushed pineapple in cans from some supermarkets
- Mix the crushed pineapple, flour and sugar to a bowl and mix until well combines
- Pour the mixture into your cake tine and bake in the middle of the oven for 60 minutes or until golden brown
- Remove from the oven and leave to cool in the tin for 15 minutes then transfer to a cooling rack until cooled
