Method

  1. Chop the pork fillet into medallions.
  2. Place in a Lock & Lock box with one tablespoons of Taste Sensation Hot Louisiana Barbecue Marinade powder and shake vigorously for a minute.
  3. Vacuum seal in a sous-vide bag.
  4. Cook in your water bath at 61° C for about 6 hours.
  5. Drain the liquid from the vacuum bag and pat the medallions dry on a paper towel.
  6. Pan fry in 1 teaspoon of [olive oil]] for a few minutes to brown the outside of the meat.
  7. Serve.
