As you know, I am not one for sweet stuff but it is rather nice. Very filling though. It is nicer with ginger biscuits than digestive, No need to make the top smooth (in fact this is impossible unless the height of your cake tin is the same as the height of the whole thing. However, I would recommend that you use something hard and plastic to cut it. I used an Alan Silverwood loose bottomed cake tin and whilst I could push the cheesecake out from the bottom, I could not remove the base. Hence had to cut it with tin base still intact. The ginger biscuit base was solid so had to be careful when cutting as did not want to ruin base of tin. Am rather precious about my Silverwood bakeware as cannot get locally since Crafty Cookshop closed. MFA had to get this particular tin in Rugby for me a year or so ago. --JuliaBalbilla 01:35, 7 November 2010 (GMT)
