Rhapsody is an soft to semi-soft [[unpasteurised]] goats’ [[milk]] [[cheese]] produced by [http://www.lightwoodcheese.co.uk/ Lightwood Cheese] of Lower Broadheath in Worcestershire.  Made with vegetarian [[rennet]] to a [[Camembert]] recipe, it is inoculated with the same mould used in the making of Stilton, giving it little flecks of blue as opposed to veins.  The rind is often a patchy blue / green.  It has a goaty, slightly salty flavour with a touch of Stilton.
