Sottocenere al tartufo cheese
Sottocenere al tartufo originates from the province of Venezia and is an unpasteurised cows’ milk cheese. ‘Sottocenere’ literally means ‘under ash’ and ‘al tartfufo’ means ‘with truffles’.
The cheese has a grey ash rind and a very pale yellow to off-white interior. It is semi-soft and has a mild taste. Slices of truffle are added to it and it is rubbed with various herbs and spices. It is then coated with a mixture of ash, cinnamon and nutmeg to preserve it and add a subtle flavour. The use of ash as a rind is traditional in Venezia.
