Slattato is produced from unpasteurised cows' milk cheese in the Montefeltro area of the Italian region of Marche. It is only made from October to March and is matured in 7 days. Round in shape, each cheese weighs between 400g and 1.8kg. It has a soft, cream coloured rind and a smooth, sweet-sour, white interior. Traditionally it is sold wrapped in fig or cabbage leaves.
