Schlander cheese
Schlander (Italian Silandro) is a cows' milk cheese from Trentino-Alto Adige. It can be made with whole or semi-skimmed milk and matures in two months at 10 to 12 degrees with a humidity of 80% and the cheeses are turned and cleaned with water and salt once a week. The shape is round, height 9 cm, diameter 30 cm and weight 7-7.5kg. The firm rind is yellow, tending to reddish. The cheese, with holes and medium density, is yellow. The flavour is sweet.
