Scacione cheese

Scacione is a fresh, soft pasteurised cows' milk cheese from Agro Pontino in the Italian region of Lazio all year round. The milk is heated to 72 degrees and then cooled to 36 degrees and calf rennet is added. It coagulates in 20 minutes. After the curd has been cut, it is put into moulds and allowed to drain. It is salted and after half an hour, it is ready to be consumed. This was originally made with goats' milk. Its height is 12cm and weight is 1.5kg, is caciotta shaped and white in colour.
