Sagitta air fried chips

One of the locally grown potato varieties is Sagitta. It's an early cropper and is grown by Mike Scott of Bottom Laddus Farms in Well End, Friday Bridge, Norfolk for the Scottish chip maket. As we know they are grown for chipping we took a chance and got a 25kg bag.

I'm glad we did - they make the most fantastic chips - even easier for us as we have a pretty decent potato chipper.

Served with Goddards chicken nuggets, they were fabulous.

Ingredients

• 3 very large Sagitta potoes, scrubbed and peeled
• 1 tablespoon olive oil
• 1 pack of Goddards chicken nuggets

Method

1. Cut the potatoes into fairly thin chips, using a potato chipper if you have one
2. They should be slightly thicker than MacDonalds fries
3. Rinse them well in cold water to remove excess starch
4. Using a salad spinner or tea towel, dry them off
5. Add 1 tablespoon olive oil to your air fryer and air-fry for around 45 minutes
6. Our latest tefal air fryer takes longer than the previous ones did; just keep your eye one them.
7. The chicken nuggets take around 15 minutes - we have a second air fryer so they go in there
8. They would cook fairly well in with the chips if you've only got the one air fryer.
