Ruddle Court Traditional Fresh cheese
Ruddle Court Traditional Fresh is a Friesian cows’ milk cheese produced by David and Penny Hill at Ruddle Court Farm in Newnham-on-Severn. It is also known as Hill's Traditional Fresh Cheese.
The cheese is white, mild and quite firm and has a similar texture to Feta. It is best consumed young, after two weeks of production. It was awarded a Bronze medal at the British Cheese Awards in October 2005.
