Queso de La Peña cheese

Queso de La Peña is a goats’ milk cheese from La Peña, near Blimea, in the ‘concejo’ of San Martín del Rey Aurelio.

To make the cheese, rennet is added to the milk and it is heated to 30º for 40 minutes. The curds are then cut into pieces about the size of a grain of rice. The temperature is raised and the curds are allowed to drain. They are then placed in moulds and pressed. After eight hours the cheese is salted by rubbing and left to mature for two months..

The cheese is cylindrical and weighs between 500 g and 1 kg. It has a compact interior and a fine, mouldy rind.
