Queso Semicurado Valles del Oso is a soft, artisan, pasteurised, cows' milk cheese produced by three brothers, Miguel, Raúl y Carlos Villabrille of Quesería Valles del Oso in the 'concejo' of Santo Adriano.
The cheese has a creamy rind which self-develops natural moulds and yeasts. The creamy interior is soft and sticky on the palate, with a mild, milky, lightly acidic, fresh flavour and a lingering aftertaste. It is a semi-cured cheese which matures for 25-30 days. It has a typical pumpkin shape due to being moulded in cheesecloth and weighs 300g.
