Queso Arico
Queso Arico is a hard goats’ milk cheese produced on the island of Tenerife.
The cheese, which was the Supreme Champion in the 2008 World Cheese Awards, has a reddish-brown rind due to its being brushed with olive oil, paprika and gofio (a type of toasted cereal only found in the Islas Canarias).
Matured for around six months, the cheese has a spicy, nutty, salty, flavour and a dryish, grainy texture. In the UK, it can be purchased from Delicioso
