Peralzola cheese

Peralzola is a soft, blue, pasteurised ewes' milk cheese produced by Quesos La Peral at Illas in the Asturias. It is a relative of La Peral, has a natural rind and is matured for 60 days.

The cheese has a delicious aroma and intense flavour, with a creamy texture. It is unique in the Asturias in that it is the only blue to be made with pure ewes' milk as the others are made from cows' milk or mixed with small percentages of ewes' and goats' milk.

It is yellow in colour with blue-green veining of varying intensity and has a soft, moist texture. It has the intense aroma associated with ageing and mould, has a complex flavour and has an extenuating aftertaste.
