Pecorino dell'Appennino Reggiano cheese

Pecorino dell'Appennino Reggiano is a ewes' milk cheese which is produced in spring and summer in Reggio Emilia in the Emilia-Romagna region of Italy. It is currently awaiting PGI recognition from the European Union. After the milk is heated in traditional vats, it is coagulated with lamb rennet and left to solidify to the right point. Then the curd is cut and stirred while heated. It is cut again, then placed in wooden moulds (fascere) and moved into a maturing room.
