Parenyica cheese
Smoked Parenica

Parenyica (Parenica) is a traditional Slovak smoked, Hungarian cows' milk cheese, with a taste of ham and is juicy, rich and pleasantly salty. It was originally made with ewes' milk.

The cheese weighs about 300g and has a diameter of 6-7 cm wide and is kneaded. The rind is golden yellow to golden brown and the interior is yellowish-greenish white. It has an oily, shiny texture which is quite fibrous.

Parenica is a semi-firm, non-ripening, semi-fat, steamed and usually smoked cheese, although the non-smoked version is also produced. Parenica is cream and yellow in color, which is darkened by steaming. The cheese is produced in strips, which are woven into snail-like spirals.

The name comes from the Slovak word for steaming. Parenica is a protected trade name under the EU's protected geographical indication.
