Mató cheese
Mató is a fresh cheese usually made from cows' milk, although goats' or ewes’ milk was traditionally used. It is also known as Julian or Brull.
The cheese is produced using either vegetable or animal rennet it is filtered through a cloth in wicker or cane baskets. It is slightly sweet due to the concentration of lactose in the milk and no salt is added. It is similar to Ricotta and is usually served with honey, as a pudding.
