This herb butter would be great with pasta and tomatoes, pan seared courgettes, barbecued sweetcorn, to name but a few.

- 3 tablespoons freshly picked and chopped basil
- 1 tablespoon lemon juice
- ¼ teaspoon lemon zest
- 50 g (2 oz) butter at room temperature
Method
- Mix all of the ingredients (A pestle and mortar is good for this, as shown in the photo, but a normal (small) glass or plastic bowl mixed with a fork, metal spoon or wooden spoon is also feasible.)
- Store in the refrigerator until required
