Guttus is a pasteurised ewes' milk cheese produced by Parrina in the comune of Orbetello in the Tuscan province of Grosseto. It is also known as 'Sheep Gorgonzola' and it is named after an Etruscan prince.
It has a round shape with a height of 10-15cm and a diameter of 30cm. The cheese is creamy with a rind showing a slight growth of mould and the flavour is fruity and mildly spicy. Maturation takes at least four months and it is produced from February to May.
